The way I cut is put the cut card in front of dealer split half the deck & put half on top of cut card & let the dealer put other half on top .

this is how they cut at the casino, it probably stops sleight of hand tricks where the deck actually doesnt' get cut at all.

the one handed cut is for the exact reason mentioned, i can quite happily shuffle and cut the deck myself whilst still keeping about 12-16 cards at the top exactly where they were when i started
the one hand cut elimantes this as the deck has to be released in full view before the top half hits the pack, unless of course you shuffle and cut one handed

This comes up quite Regulary at all events, people dont wanna cut they wanna tap the top and then also I have had the strip style cut (where they pull out about 20 cards from the middle and they go on top) but i have even had the call over once for a two handed cut, so i explain it this way .....
1/ You must always cut the cards and its to the person sitting to the right of you, they have to cut minimum 5 cards from either end, i generally get a smart remark back asking if they can count the 5 cards to which a death stare usually solves that problem !!
2/ You dont strip the deck although i know its cut pretty well this isnt really an issue, if i notice it i usually let it slide but if someone kicks up i have to tell them its a simple cut from approx the centre and thats it... no usual smart remarks !!
3/ The one hand cut is for the camera reason at the casino, its cause the dealer is cutting the cards and it eliminates a fake cut which is always good when you have a dealer doing everything !!
YOU NEVER CUT YOUR OWN CARDS AT AN 888PL EVENT.... thats a pretty basic ruling !!
